Ingredients

6 servings
Goan sausage2 links, skins off, crumbled
Chicken, boneless300 g boneless thighs, diced
Cooking oil (vegetable oil)1 tbsp
Onion1 large, chopped
Capsicum (green capsicum, green bell pepper)1, chopped
Celery2 sticks, chopped
Garlic3 cloves, chopped
Kashmiri chilli powder1 tsp
Dried thyme1 tsp
Bay leaf (indian bay leaf)2 leaves
Tomato2, chopped
Basmati rice1½ cups, rinsed
Chicken stock (chicken broth)2¾ cups
Salt1 tsp
Prawns (shrimp)300 g, peeled
Spring onion (green onion, scallion)3, sliced
Lemon1, in wedges

Method

6 steps
  1. 1Heat the oil in a heavy pot on medium heat. Fry the sausage 5 minutes and lift out.
  2. 2Brown the chicken in the sausage fat on medium high heat for 5 minutes and lift out.
  3. 3Add the onion, capsicum and celery and cook 6 minutes on medium heat. Add the garlic, chilli, thyme and bay and cook 1 minute. Add the tomato and cook 4 minutes.
  4. 4Stir in the rice for 1 minute, then return the sausage and chicken with the stock and salt. Bring to a boil, cover and cook on low heat 15 minutes.
  5. 5Press the prawns into the top of the rice, cover and cook 5 minutes more, then rest 5 minutes off the heat.
  6. 6Fluff with a fork and scatter the spring onion. Serve with lemon.
Serve it like this

Bring the pot to the table, prawns arranged on top in a ring, then scatter spring onion and add lemon wedges around the edge.
