Ingredients

6 servings
Rajma, dry (dried red kidney beans)1 cup red beans, soaked overnight
Goan sausage4 Goan chouriço sausages, casing removed
Pork250 g pork, cubed
Onion2 medium, chopped
Tomato1 medium, chopped
Garlic5 cloves, chopped
Kashmiri chilli powder1¼ tsp
Vinegar1 tbsp
Cooking oil (vegetable oil)1 tbsp
Saltto taste
Water3½ cups

Method

4 steps
  1. 1Pressure cook the soaked beans with water and salt for 5 whistles.
  2. 2Heat oil, brown the pork, then add the sausage meat and cook until its red oil runs.
  3. 3Add onion, garlic, tomato and chilli powder and cook until soft.
  4. 4Add the beans with their liquid and vinegar. Simmer 20 to 25 minutes until thick and the pork is tender.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
