Prawns (shrimp)400 g, cleaned and deveined
Fresh grated coconut1½ cups
Dried red chilli6 to 7 Kashmiri, soaked
Coriander seeds2 tsp
Cumin seeds½ tsp
Turmeric (ground turmeric)¾ tsp, divided
Garlic4 cloves
Onion1 medium, finely sliced
Drumstick (moringa pods)2, in finger lengths
Kokum4 to 5 pieces
Green chilli2, slit
Coconut oil2 tbsp
Saltto taste
Water2 cupsMethod
- 1Toss the prawns with a pinch of turmeric and salt and keep aside.
- 2Grind the coconut, soaked chillies, coriander, cumin, remaining turmeric and garlic with water to a very smooth paste.
- 3Heat coconut oil and soften the onion. Add the masala and water, then the drumstick pieces. Simmer until tender.
- 4Add kokum, green chillies and salt. Simmer a few minutes.
- 5Add the prawns and simmer just until cooked through.
- 6Rest 10 minutes and serve with rice.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
