Ingredients

6 servings
Maida (all-purpose flour, plain flour)2 cups, plus 2 tbsp for the filling
Butter3 tbsp, divided
Water1 cup
Saltto taste
Prawns (shrimp)250 g small, chopped
Onion1, finely chopped
Garlic3 cloves, minced
Green chilli2, minced
Tomato1 small, chopped
Turmeric (ground turmeric)a pinch
Black pepper½ tsp
Milk¾ cup
Coriander leaves (cilantro)2 tbsp
Egg1, beaten
Breadcrumbs¾ cup
Cooking oil (vegetable oil)for frying, about 5 tbsp absorbed

Method

5 steps
  1. 1Boil water with 25 g butter and salt; tip in 225 g flour and stir to a smooth dough. Cool and knead.
  2. 2Sauté onion, garlic and chilli in the rest of the butter; add tomato, prawns, turmeric and pepper.
  3. 3Sprinkle 2 tbsp flour, stir in milk and cook to a thick white sauce; add coriander and cool.
  4. 4Roll dough thin, cut rounds, fill, fold into half moons and seal.
  5. 5Dip in egg, coat in breadcrumbs and fry at 170 C until golden.
Serve it like this

Stack rissoles on a platter with lime wedges and a bowl of chilli sauce. Serve hot.
