Ingredients

4 servings
Idli dosa batter8 leftover idlis, cubed
Cornflour (cornstarch)3 tbsp
Maida (all-purpose flour, plain flour)2 tbsp
Cooking oil (vegetable oil)for shallow frying and sauce
Garlic4 cloves, chopped
Ginger2.5 cm, chopped
Green chilli2, slit
Onion1, in petals
Capsicum (green capsicum, green bell pepper)½, in squares
Spring onion (green onion, scallion)2 stalks
Soy sauce1 tbsp
Red chilli sauce1 tbsp
Tomato ketchup (ketchup)1½ tbsp
Vinegar1 tsp
Black pepper¼ tsp
Saltto taste
Water½ cup

Method

4 steps
  1. 1Toss idli cubes in a thin batter of cornflour, maida, salt and water. Shallow fry till crisp.
  2. 2Stir fry garlic, ginger, chilli, onion and capsicum on high 2 minutes.
  3. 3Add sauces, vinegar, pepper and a slurry of water and the remaining cornflour. Cook till glossy.
  4. 4Toss the idlis in and finish with spring onion.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
