Minced mutton (goat mince, ground goat)400 g beef or mutton mince
Breadcrumbs⅓ cup
Egg1
Parmesan⅔ cup, divided
Garlic2 cloves, grated
Flat leaf parsley2 tbsp
Olive oil1½ tbsp
Onion1
Carrot2, diced
Celery1 stick
Chicken stock (chicken broth)8 cups
Pasta120 g acini di pepe or small pasta
Spinach200 g or escarole
Saltto taste

Method

4 steps
  1. 1Mix mince, crumbs, egg, half the parmesan, garlic, parsley and salt. Roll into tiny balls.
  2. 2Soften onion, carrot and celery in oil, add broth and simmer.
  3. 3Drop in meatballs and pasta; simmer until cooked, about 10 minutes.
  4. 4Stir in greens until wilted. Serve with parmesan.
Serve it like this
