Jau gok, Cantonese New Year dumplings.

Ingredients

10 servings
Maida (all-purpose flour, plain flour)2 cups
Butter3 tbsp, or lard
Egg1
Water⅓ cup
Peanuts¾ cup, roasted, finely chopped
Sesame seeds¼ cup, toasted
Desiccated coconut (unsweetened shredded coconut)½ cup
Sugar⅓ cup plus 1 tbsp
Cooking oil (vegetable oil)for deep frying, about 80 g absorbed

Method

  1. 1Rub the butter into the flour, then add the egg and water and knead to a smooth dough. Rest 20 minutes.
  2. 2Mix the peanuts, sesame, coconut and sugar.
  3. 3Roll the dough thin and cut 8 cm rounds. Place a spoon of filling on one half, fold and seal.
  4. 4Crimp the edge by folding and pinching it into a rope pattern.
  5. 5Fry in oil at 170°C in batches until golden, about 3 minutes. Drain and cool completely before storing.
Serve it like this

Pile in a lidded tray or red tin and serve with tea at room temperature.
