Ingredients

3 servings
Egg6, hard boiled
Onion3 medium, thinly sliced
Tomato1, chopped
Ginger2.5 cm, chopped
Garlic4 cloves, chopped
Green chilli2, slit
Kashmiri chilli powder1 tbsp
Coriander powder (ground coriander)2 tsp
Turmeric (ground turmeric)¼ tsp
Fennel seeds½ tsp, crushed
Black pepper½ tsp, crushed
Garam masala½ tsp
Curry leaves1 sprig
Coconut oil3 tbsp
Saltto taste

Method

5 steps
  1. 1Boil the eggs for 10 minutes, cool in cold water, peel and make a few shallow slits on each.
  2. 2Heat the coconut oil and cook the onions with a pinch of salt until deep golden.
  3. 3Add ginger, garlic, green chillies and curry leaves, then the chilli powder, coriander, turmeric and fennel on low heat.
  4. 4Add the tomato and cook to a thick masala.
  5. 5Add the eggs with a splash of water, roll them in the masala and roast 5 minutes. Finish with garam masala and pepper.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
