Classic Kozhikodan halwa.

Ingredients

12 servings
Maida (all-purpose flour, plain flour)1¼ cups
Waterfor soaking and cooking
Sugar1¾ cups
Coconut oil½ cup
Cashews⅓ cup, halved
Cardamom½ tsp
Lemon juice1 tsp

Method

4 steps
  1. 1Knead maida with water, soak in plenty of water 3 hours, then squeeze to extract the milky starch. Rest and pour off the clear water.
  2. 2Make a thin syrup with sugar and water, add lemon juice and the starch, and cook, stirring constantly.
  3. 3Add coconut oil a little at a time and keep stirring until it leaves the pan and turns translucent.
  4. 4Stir in cashews and cardamom, pour into a greased tray and cut once set.
Serve it like this

Slice into thin strips, arrange in a fan and serve at room temperature with tea.
