Dried white peas1 cup, soaked overnight
Water3 cups
Turmeric (ground turmeric)¼ tsp
Onion1 large, finely chopped
Tomato1 large, finely chopped
Green chilli3, finely chopped
Ginger2.5 cm, julienned
Lemon juice2 tbsp
Tamarinda small lime sized ball, as pulp
Chaat masala1½ tsp
Cumin powder (ground cumin)1½ tsp, roasted
Red chilli powder (indian red chili powder)½ tsp
Black salt½ tsp

Coriander leaves (cilantro)chopped

Butterfor the kulchasMethod
- 1Pressure cook the soaked peas with water, turmeric and salt for 3 to 4 whistles. Let pressure release naturally.
- 2Mash some of the peas so the mixture thickens. Cool to warm.
- 3Stir in tamarind pulp, roasted cumin, chilli powder, black salt and chaat masala.
- 4Serve topped with onion, tomato, green chilli, ginger, coriander and lemon juice.
- 5Warm the kulchas on a tawa with butter and serve alongside.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
