Classic matumbo.

Ingredients

4 servings
Goat tripe (boti)800 g beef or goat tripe, very well cleaned
Onion1 large, chopped
Tomato3, chopped
Capsicum (green capsicum, green bell pepper)1, diced
Garlic3 cloves
Gingerthumb
Green chilli1 to 2
Curry powder2 tsp
Coriander leaves (cilantro)a handful
Cooking oil (vegetable oil)2 tbsp
Waterfor cooking
Saltto taste

Method

4 steps
  1. 1Wash the tripe thoroughly, then pressure cook with water and salt for 8 whistles. Let the pressure release naturally.
  2. 2Drain and cut into small strips.
  3. 3Fry onion, garlic, ginger and chilli in oil, add curry powder, tomatoes and pepper and cook down.
  4. 4Add the tripe and a splash of cooking water and simmer 15 minutes. Finish with coriander.
Serve it like this

Serve hot in a bowl with ugali and kachumbari on the side.
