Ingredients

12 servings
Maida (all-purpose flour, plain flour)2 cups
Rava (semolina)¼ cup fine semolina
Olive oil½ cup
Sugar3 tbsp for dough, 6 tbsp for syrup
Orange juice⅓ cup
Orangezest of 1/2
Baking powder¾ tsp
Baking soda (bicarb soda, bicarbonate of soda)¼ tsp
Cinnamon powder1 tsp, divided
Whole spices¼ tsp ground cloves
Honey6 tbsp
Water6 tbsp
Walnuts½ cup, finely chopped

Method

5 steps
  1. 1Make the syrup: simmer honey, 6 tbsp sugar, water and a cinnamon stick 5 minutes. Cool.
  2. 2Whisk oil, 3 tbsp sugar, orange juice, zest and soda dissolved in the juice.
  3. 3Add flour, semolina, baking powder, cinnamon and cloves. Mix gently to a soft dough.
  4. 4Shape into ovals, press with a fork and bake at 180°C for 22 minutes.
  5. 5Dip warm cookies into the cool syrup 30 seconds and top with walnuts and cinnamon.
Serve it like this

Stack on a plate with walnuts on top, served with Greek coffee or tea.
