Whole green moong (mung beans)¾ cup whole moong, soaked and sprouted
Fresh grated coconut1 cup
Onion1 small, sliced
Dried red chilli4 dried red chillies
Coriander seeds1½ tsp
Cumin seeds½ tsp
Turmeric (ground turmeric)½ tsp
Tamarinda small piece
Jaggery1½ tsp
Coconut oil1½ tbsp

Water1⅔ cupsMethod
- 1Soak the moong overnight, then tie in a damp cloth for a day until it sprouts. Cook the sprouts in water with salt until tender, about 12 minutes.
- 2Roast the chillies and coriander seeds lightly and grind with coconut, cumin, turmeric and tamarind.
- 3Heat coconut oil, cook onion until soft, add the paste and fry 3 minutes.
- 4Add sprouts, jaggery and water and simmer 8 minutes.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
