Mousse au chocolat.

Ingredients

6 servings
Dark chocolate (bittersweet chocolate)200 g, 60 to 70 percent
Egg6, very fresh, separated
Sugar2½ tbsp
Butter1½ tbsp
Salta pinch

Method

5 steps
  1. 1Melt chocolate and butter over a pan of barely simmering water. Cool until just warm.
  2. 2Stir in the yolks one at a time.
  3. 3Whisk the whites with salt to soft peaks, add sugar and whisk to firm, glossy peaks.
  4. 4Stir a third of the whites into the chocolate to loosen it, then gently fold in the rest.
  5. 5Spoon into a bowl or glasses and chill at least 4 hours.
Serve it like this

Serve chilled in small glasses or one big bowl, with a few chocolate shavings on top and a crisp biscuit alongside.
