Ingredients

4 servings
Lamb (lamb or tender mutton)12 lamb rib chops, about 1.2 kg on the bone
Olive oil3 tbsp
Lemon juicejuice of 1 lemon
Garlic3 cloves, grated
Dried oregano1½ tsp
Dried thyme½ tsp
Saltto taste
Black pepperto taste

Method

4 steps
  1. 1Mix oil, lemon, garlic, oregano and thyme and coat the chops. Marinate 30 minutes or up to 4 hours.
  2. 2Season with salt just before grilling.
  3. 3Grill over very high heat for 2 to 3 minutes per side.
  4. 4Rest 3 minutes and squeeze over more lemon.
Serve it like this

Pile the chops on a platter with lemon wedges and oregano, with fries, tzatziki and Greek salad alongside.
