Salmon en papillote.

Ingredients

4 servings
Salmon4 fillets, skinless
Zucchini (courgette, baby marrow)1 medium, cut into ribbons or thin coins
Carrot1, cut into matchsticks
Leek1 small, thinly sliced (or spring onion)
Lemon1, thinly sliced
Dill leavesa small bunch (or parsley)
Butter4 small knobs
Olive oil2 tsp
Black pepperto taste
Saltto taste

Method

5 steps
  1. 1Heat the oven to 200 C and cut four large hearts or rectangles of baking paper.
  2. 2Lay vegetables on one half of each sheet, oil and season, then top with salmon, lemon slices, dill and a knob of butter.
  3. 3Fold the paper over and crimp the edges in small overlapping pleats all the way round.
  4. 4Bake on a tray until the parcels puff up and brown lightly.
  5. 5Bring the parcels to the table and cut them open in front of everyone.
Serve it like this

Serve each parcel on a warm plate and let everyone cut their own open. Pour the juices over a spoonful of new potatoes.
