Ingredients

4 servings
Sweet potato3 medium
Ghee2 tsp
Lemon juice1 tbsp
Green chilli1, finely chopped
Cumin seeds1 tsp, roasted and ground
Black peppera pinch
Pomegranate seeds⅓ cup
Peanuts2 tbsp, roasted
Coriander leaves (cilantro)a handful
Rock salt (sendha namak)to taste

Method

4 steps
  1. 1Roast sweet potatoes on a gas flame, in the oven, or steam them till tender.
  2. 2Peel and cube. Toss in a hot pan with ghee till edges caramelise.
  3. 3Toss with lemon, chilli, cumin, pepper, rock salt and coriander.
  4. 4Top with pomegranate and peanuts.
Serve it like this
