Ingredients

4 servings
Maida (all-purpose flour, plain flour)¾ cup plus 1 tbsp
Egg2
Water1½ cups dashi or water
Soy sauce2 tsp
Octopus150 g boiled, in small cubes
Spring onion (green onion, scallion)2, finely sliced
Pickled gingerred pickled ginger, chopped
Cooking oil (vegetable oil)for the pan
Tonkatsu saucetakoyaki or tonkatsu sauce
Mayonnaise2 tbsp
Bonito flakesa handful
Nori sheetsaonori or crushed nori

Method

5 steps
  1. 1Whisk the egg, dashi and soy, then whisk in the flour to a very thin batter.
  2. 2Heat a takoyaki pan or an appe or aebleskiver pan, oil every hole generously.
  3. 3Pour batter to overflowing, then add octopus, spring onion and ginger to each hole.
  4. 4When the bottoms set, turn each ball 90 degrees with a skewer, tucking the edges in. Keep turning until round and golden.
  5. 5Top with sauce, mayonnaise, bonito and nori.
Serve it like this

Pile 6 to 8 balls in a paper boat, drizzle with sauce and mayonnaise and finish with bonito and nori. Warn everyone the centres are hot.
