Ingredients

8 servings
Tarama (cured fish roe)100 g cured cod or carp roe
White bread4 slices stale bread, crusts off
Olive oil⅔ cup
Lemon juice3 tbsp
Onion¼ small, grated
Waterfor soaking the bread

Method

4 steps
  1. 1Soak the bread in water, then squeeze dry.
  2. 2Blend the roe with onion and bread.
  3. 3With the blender running, add oil slowly, alternating with lemon.
  4. 4Taste and add lemon. Chill.
Serve it like this

Swirl into a shallow bowl, drizzle olive oil and top with an olive. Warm pita and raw vegetables alongside.
