Ingredients

8 servings
Maida (all-purpose flour, plain flour)1⅔ cups
Butter7 tbsp, cold
Sugar2 tbsp for pastry, 2 1/2 tbsp for apples
Egg yolk1
Water2 tbsp, ice cold
Apple6 apples
Lemon juice1 tbsp
Apricot jam (apricot preserves)3 tbsp
Salta pinch

Method

5 steps
  1. 1Rub butter into flour, salt and 2 tbsp sugar. Add yolk and water to form a dough. Chill 30 minutes.
  2. 2Cook 3 apples, chopped, with sugar and lemon to a thick compote.
  3. 3Roll pastry into a tart tin and blind bake 12 minutes at 190°C.
  4. 4Spread compote, then fan thin slices of remaining apples in circles.
  5. 5Bake 35 minutes, then brush with warm apricot jam.
Serve it like this

Serve slices slightly warm with crème fraîche or vanilla ice cream.
