Classic tarte normande.

Ingredients

8 servings
Maida (all-purpose flour, plain flour)1⅔ cups
Butter100 g for pastry, 20 g for apples
Sugar2 tbsp for pastry, the rest for filling
Egg yolk1 yolk
Water2 tbsp, cold
Salta pinch
Apple4 to 5 apples, sliced

Crème fraîche¾ cup
Almondsground
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp

Method

5 steps
  1. 1Rub the butter into the flour, sugar and salt. Add the yolk and cold water and press into a dough. Chill 30 minutes.
  2. 2Line a 24 cm tin and blind bake at 180°C for 15 minutes.
  3. 3Soften the apple slices briefly in butter, then arrange them in overlapping circles in the case.
  4. 4Whisk the eggs, sugar, crème fraîche, almonds and vanilla and pour over the apples.
  5. 5Bake at 180°C for 35 to 40 minutes until set and golden.
Serve it like this

Serve slightly warm in wedges with a spoon of crème fraîche on the side.
