Ingredients

Pumpkin1 cup, cubed
Sweet potato1 small, cubed
Raw banana (green plantain)1, cubed
Drumstick (moringa pods)2, in pieces
Elephant foot yam½ cup, cubed
Green beans1 cup, cut
Thick coconut milk¾ cup
Thin coconut milk1¼ cups
Green chilli3, slit
Ginger1.5 cm, julienned
Rice flour1 tbsp
Coconut oil1 tbsp
Curry leaves8 to 10
Saltto taste

Method

4 steps
  1. 1Cook the yam, drumstick, raw banana and beans in thin coconut milk with green chillies, ginger and salt until half done.
  2. 2Add pumpkin and sweet potato and cook until all are tender.
  3. 3Mix rice flour into the thick coconut milk and stir in. Heat gently without boiling, 3 minutes.
  4. 4Finish with coconut oil and curry leaves.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
