Ingredients

Chicken, curry cut (bone in chicken, small pieces)1 kg, bone in
Basmati rice2¼ cups, soaked
Dried barberries½ cup
Sugar1 tbsp
Butter3½ tbsp
Saffrona generous pinch, bloomed
Onion2
Turmeric (ground turmeric)½ tsp
Pistachios2 tbsp, slivered
Almonds2 tbsp, slivered
Cooking oil (vegetable oil)2 tbsp
Saltto taste
Water1⅔ cups

Method

4 steps
  1. 1Brown the onion in oil, add the chicken and turmeric, then the water. Cover and braise until tender.
  2. 2Cook the rice Persian style: parboil 6 minutes, drain, then steam with butter on low for 30 minutes.
  3. 3Fry the barberries with a spoon of butter and the sugar for 1 minute only.
  4. 4Mix some rice with the saffron. Pile white rice, then saffron rice, barberries and nuts on top.
Serve it like this

Mound rice on a platter, barberries and nuts on top, chicken alongside with its sauce.
