Ingredients

4 servings
Goat tripe (boti)600 g, cleaned
Onion2, chopped
Tomato1, chopped
Ginger garlic paste2 tbsp
Red chilli powder (indian red chili powder)1 tbsp
Coriander powder (ground coriander)1 tbsp
Garam masala1 tsp
Turmeric (ground turmeric)½ tsp
Cooking oil (vegetable oil)3 tbsp
Curry leavesa sprig
Coriander leaves (cilantro)a handful
Water2 cups
Saltto taste

Method

4 steps
  1. 1Clean the tripe thoroughly with turmeric, salt and hot water, scraping off the inner layer; cut into small pieces.
  2. 2Pressure cook tripe with turmeric, salt and water for 8 to 10 whistles. Let the pressure release naturally.
  3. 3Fry onions in oil until brown, add ginger garlic, tomato and powders.
  4. 4Add tripe with some stock and simmer until thick.
Serve it like this

Serve hot in a bowl with jonna rotte, rice or chapati, and sliced onion.
