Classic soufflé au chocolat.

Ingredients

4 servings
Dark chocolate (bittersweet chocolate)120 g, chopped
Butter2 tbsp, plus more for the ramekins
Egg yolk3
Egg white4
Sugar5 tbsp, plus extra to coat
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Salta pinch

Method

6 steps
  1. 1Heat the oven to 200 C with a tray inside. Brush 4 ramekins with butter in upward strokes and coat with sugar.
  2. 2Melt the chocolate and butter gently. Cool slightly, then stir in the yolks and vanilla.
  3. 3Whisk the whites with salt to soft peaks, then add the sugar gradually until glossy and firm but not dry.
  4. 4Stir a third of the whites into the chocolate to loosen, then fold in the rest gently.
  5. 5Fill the ramekins to the top, level, and run a thumb round the rim. Bake on the hot tray 12 to 14 minutes.
  6. 6Dust with icing sugar and serve at once.
Serve it like this

Carry straight from oven to table on a saucer, dust with icing sugar and serve with a jug of cold cream to pour into the centre.
