Ingredients

4 servings
Rice flour2 cups roasted idiyappam flour
Waterabout 1 1/2 cups, boiling
Coconut oil2 tsp
Fresh grated coconut½ cup
Saltto taste

Method

5 steps
  1. 1Bring water to a rolling boil with salt and coconut oil. Pour it over the rice flour gradually, stirring with a spoon.
  2. 2Once it is cool enough to touch, knead into a soft, smooth dough.
  3. 3Grease idli plates or steamer trays and sprinkle a little coconut on each.
  4. 4Fill the press with dough and press in circular motions to make small nests. Top with a little more coconut.
  5. 5Steam on medium.
Serve it like this

Serve hot in bowls straight from the pan, while everything is still glossy.
