Ingredients

4 servings
Chicken, curry cut (bone in chicken, small pieces)600 g
Potato2 medium, cubed
Carrot1, cubed
Onion1 large, sliced
Ginger4 cm, julienned
Green chilli4, slit
Whole spicescinnamon, cloves, cardamom
Black pepper1 tsp, crushed
Thin coconut milk1⅔ cups
Thick coconut milk⅔ cup
Coconut oil2 tbsp
Curry leaves3 sprigs
Cashews6, optional
Saltto taste

Method

3 steps
  1. 1Heat coconut oil, fry whole spices and cashews, then ginger, green chilli, curry leaves and onion until soft but not brown.
  2. 2Add chicken, pepper and salt and stir 3 minutes. Add potatoes, carrot and thin coconut milk, cover and simmer.
  3. 3When chicken and potatoes are tender, add thick coconut milk and warm through without boiling.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
