Rice flour2 cups puttu podi (roasted rice flour)
Waterabout 2/3 cup, for the flour
Fresh grated coconut1½ cups: 1 for puttu, 1/2 for curry

Kala chana, dry (black chickpeas)¾ cup, dry

Tomato1, chopped
Ginger garlic paste1 tbsp

Coriander powder (ground coriander)1 tbsp
Kashmiri chilli powder1½ tsp
Turmeric (ground turmeric)¼ tsp
Garam masala1 tsp
Coconut oil2 tbsp

Method
6 steps
1Pressure cook the soaked kala chana with salt and water for 5 to 6 whistles. Let the pressure release naturally.
2Dry roast 1/2 cup coconut until deep brown, then grind it with coriander powder and chilli powder to a paste.
3Fry onion in most of the coconut oil until golden. Add ginger garlic paste, green chilli, tomato and turmeric, then the paste, chana and some cooking water. Simmer.
4Stir in garam masala. Temper mustard, red chilli and curry leaves in the remaining oil and pour over.
5For puttu, sprinkle salted water into the rice flour and rub with your fingers until it holds when pressed.
6Layer coconut and flour in the puttu maker, starting and ending with coconut. Steam.
Serve it like this
Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
