Classic spotted dick.

Ingredients

6 servings
Maida (all-purpose flour, plain flour)2 cups
Baking powder2 tsp
Beef suetshredded
Sugar75 g for pudding, 30 g for custard
Raisinscurrants
Lemonzest of 1
Milk150 ml for pudding, 500 ml for custard
Custard powder3 tbsp

Method

5 steps
  1. 1Mix the flour, baking powder, suet, 75 g sugar, currants and lemon zest. Add 150 ml milk to make a soft dough.
  2. 2Shape into a log and wrap in buttered baking paper with a pleat, then foil. Tie the ends.
  3. 3Steam for 1 1/2 hours, topping up with boiling water.
  4. 4Make custard with the remaining milk, custard powder and sugar.
  5. 5Slice the pudding and pour over hot custard.
Serve it like this

Serve thick slices in warm bowls with plenty of hot custard poured over.
