Ingredients

Apple8 firm apples, peeled, quartered
Sugar¾ cup
Butter5 tbsp
Puff pastry1 sheet
Salta pinch

Method

5 steps
  1. 1In a 24 cm ovenproof pan, melt sugar over medium heat without stirring until it turns amber. Add butter and a pinch of salt.
  2. 2Pack the apple quarters tightly in the caramel, rounded side down. Cook on low until they soften and the caramel thickens.
  3. 3Lay the pastry over, tuck the edges down inside the pan and cut a few steam holes.
  4. 4Bake at 200 C until the pastry is puffed and deep gold.
  5. 5Rest 5 minutes, place a plate on top and flip in one confident move.
Serve it like this

Turn out onto a round platter and serve warm in wedges with crème fraîche, whipped cream or vanilla ice cream.
